Magical Christmas biscuits from the nature hotel

Even in late autumn, a tempting aroma spreads through the kitchen of the Naturhotel. The time for Christmas biscuits has arrived again.

The variety of Christmas biscuits is just as impressive as the traditions associated with their preparation. Whether classic vanilla crescents, delicate cinnamon stars, crispy butter biscuits or spicy gingerbread – the choice is almost endless and has the right biscuit for every taste.

Amidst the hustle and bustle of this festive season, Christmas biscuits offer a delicious moment of peace and contemplation. A simple bite can bring back memories, continue traditions and warm hearts. Christmas biscuits become little ambassadors of love and joy, which are in every biscuit and perfectly round off the festive atmosphere around Christmas and so our guests can look forward to the Naturhotel-Laible every year.

Classic vanilla croissants from the nature hotel

The Laible (Christmas biscuits) at the Naturhotel are also absolute classics. We use tried and tested family recipes that have been passed down from generation to generation. One of these is our vanilla kipfer:

Ingredients:

250 g flour

200 g butter (room temperature)

100 g ground almonds

80 g icing sugar

1 sachet of vanilla sugar

A pinch of salt

For the vanilla sugar mixture:

2 sachets of vanilla sugar

80 g icing sugar

Preparation:
Sieve the flour onto a work surface and make a well in the centre. Cut the butter at room temperature into small pieces and add to the well together with the ground almonds, icing sugar, vanilla sugar and a pinch of salt.

Knead all the ingredients into a smooth dough. Shape the dough into a ball, wrap in cling film and leave to rest in the fridge for at least 30 minutes.

Preheat the oven to 180°C.

Shape the dough in portions into finger-thick rolls and cut into pieces about 5 cm long. Shape each piece into a thin roll, slightly pointed at the ends, and bend into a croissant shape.

Place the croissants on a baking tray lined with baking paper and bake in the preheated oven for approx. 10-12 minutes until golden brown.

In the meantime, prepare the vanilla sugar mixture by mixing the vanilla sugar with the icing sugar.

While the crescents are still warm, carefully turn them in the vanilla sugar mixture until they are evenly coated.

Leave the finished vanilla crescents to cool completely on a wire rack.

The vanilla crescents are now ready to be enjoyed! You can store them in an airtight tin to keep them nice and crumbly. Bon appétit!
